Coconut Scrambled Egg


Ingredients

  1. 2 Eggs
  2. Onion, a quarter of medium size
  3. Coconut Oil 1/4 cup
  4. 2 SmallTomatoes Diced
  5. Diced Habanero pepper Diced
  6. Seasoning Cube half a cube
  7. Coconut Milk (Optional) 2 Tablespoon
  8. Salt to Taste

Direction
  1. Add Coconut milk to the egg
  2. Add salt and seasoning cube and whisk everything together,then set aside
  3. Pour the coconut oil into the frying pan on a medium heat
  4. Add the onion and stir a little
  5. Add the diced pepper and tomatoes
  6. Allow to fry for few seconds
  7. Add the egg and scramble with the onion pepper and tomatoes
  8. You can serve with Bread, Boiled Potatoes or Yam
