- 2 Eggs
- Onion, a quarter of medium size
- Coconut Oil 1/4 cup
- 2 SmallTomatoes Diced
- Diced Habanero pepper Diced
- Seasoning Cube half a cube
- Coconut Milk (Optional) 2 Tablespoon
- Salt to Taste
Direction
- Add Coconut milk to the egg
- Add salt and seasoning cube and whisk everything together,then set aside
- Pour the coconut oil into the frying pan on a medium heat
- Add the onion and stir a little
- Add the diced pepper and tomatoes
- Allow to fry for few seconds
- Add the egg and scramble with the onion pepper and tomatoes
- You can serve with Bread, Boiled Potatoes or Yam
