Nigerian Corn and Cassava Flour Swallow

 


Ingredients

1 cup Corn flour (Finely ground)

1 cup Cassava flour (lafun)

2 and 1/2  cups of water


Direction

  1. Sieve the corn flour and cassava flour separately and set aside
  2. Add a pinch of salt to 2 and 1/2 cups of water and bring to boil
  3. Add about 3/4 cups of room temperature water to half cup of corn flour and mix till smooth
  4. Pour the mixture into the boiling water. Properly stir to prevent lump formation
  5. Allow to cook for about 2 minutes
  6. Pour the other half cup of dry corn flour. Stir continuously till smooth
  7. Cover and allow to cook for 5 minutes on low heat
  8. Remove from stove after 5 minutes and pour 1 cup of cassava four. Stir till smooth
  9. Wrap immediately in food wrapper

Servings:  2

Serve with any Nigerian soup
