Ingredients
- Okra, about 2 cups when chopped
- Habanero pepper (Rodo) about 3 medium sizes, diced
- Fried Fish, 3 medium sizes (Remove head and tear into smaller chunks). Feel free to add any other fish or meat of choice
- Palm oil, 2 table spoon
- 2 small seasoning cubes
- Salt to taste
- Locust bean (Iru pete) to taste
- Onion half a medium size
- Rinse and dice the Okra into tiny cubes and set aside
- Pour the Palm oil into the pot
- Add the onions and the locust beans and stir together to cook for few seconds
- Add the Pepper
- Add some meat stock (this is optional).You may not need to add salt if you are adding meat stock
- Add some water to cook
- Add the fish.You can add seasoning cube and any other spice of choice, only be careful of saltiness
- Cover and allow to cook for about 5 - 7 minutes
- When its cooked, add the okra and stir into the soup
- Cover and allow to cook for about 5 minutes if you prefer it a bit crunchy or cook just a little more if you prefer it soft
- Serve with any Nigerian swallow
