Ingredients:
- Pepper (Rodo) 150gms
- Tomatoes 500gms
- Bawa (Nigerian Red bell peppers) 100gms blended together with half a medium sized onion
- Fried Fish
- Boiled Chicken Gizzard (You can use fried meat, or chicken)
- Meat stock
- Palm oil, 3 table spoons
- Vegetable oil, 1 cup
- Locust beans to taste
- 2 Seasoning cubes
- 1 medium sized Onion
- Salt to taste
Direction:
- Pour the vegetable oil into a dry cooking pot and add the palm oil. Let it heat up for a few seconds, (this method is better than bleaching palm oil).
- Add the diced onion and the locust bean
- Stir, and let them heat up for few seconds
- Add the blended pepper (combination)
- Add the meat stock from, your chicken gizzard
- Add the fish (You can remove the head and break other parts into size able chunks)
- Add Gizzard, seasoning cube, and any other spice of your choice
- You can add a little water if the soup is thick. Allow to cook for some time and taste before adding salt
- Cover and allow to cook
- Cook till the stew is thicker and the oil comes up
- Serve with ofada rice or any other white rice
