Nigerian Beans Porridge


 Ingredients

  1.       Honey Beans (Ewa Oloyin) 2 cups
  2.       Habanero Pepper 2
  3.      Tomatoes 2 Medium size
  4.       Onion, Half a Medium size
  5.     Palm Oil 1/4 cup
  6.    1 Seasoning cube
  7.     Salt to taste

Direction

  1.  Pick the beans to remove any debris
  2. Wash the beans  and transfer into a clean pot of water
  3.  Cover and allow to boil
  4.    Remove the water from the beans when the water starts to boil
  5.   Put fresh water and start cooking
  6.  Add onion and salt, cover and cook till beans is tender
  7.   Add the blended Pepper when the beans is tender
  8.  Add Palm oil, ground crayfish, seasoning cube and any other seasoning of choice
  9.   Cover and allow everything to cook for about 5 mins
  10.    When its cooked you can serve or...
  11.    You may mash the beans - this step is optional though good if you will be serving kids
  12.   Allow to cook for about another 2 mins and serve.
You can serve with bread, yam, rice or any other carbohydrate of choice
