OKRA SOUP





Ingredients
  1. Okra, about 2 cups when chopped
  2. Habanero pepper (Rodo) about 3 medium sizes, diced
  3. Fried Fish, 3 medium sizes (Remove head and tear into smaller chunks). Feel free to add any other fish or meat of choice
  4. Palm oil, 2 table spoon
  5. 2 small seasoning cubes
  6. Salt to taste
  7. Locust bean (Iru pete) to taste
  8. Onion half a medium size
 Direction
  1. Rinse and dice the Okra into tiny cubes and set aside
  2. Pour the Palm oil into the pot
  3. Add the onions and the locust beans and stir together  to cook for few seconds
  4. Add the Pepper
  5. Add some meat stock (this is optional).You may not need to add salt if you are adding meat stock
  6. Add some water to cook
  7. Add the fish.You can add seasoning cube and any other spice of choice, only be careful of saltiness
  8. Cover and allow to cook for about 5 - 7 minutes 
  9. When its cooked, add the okra and stir into the soup
  10. Cover and allow to cook for about 5 minutes if you prefer it a bit crunchy or cook just a little more if you prefer it soft
  11. Serve with any Nigerian swallow
Note: Okra soup can be served with another stew containing pieces of meat, fish or as you desire.
