SORGHUM/ GUINEA CORN MUFFIN
Ingredients
1. Brown Sorghum Flour 1 cup
2. All purpose Flour 1 and 1/4 cup
3. Baking powder 1 teaspoon
4. Baking soda 1/2 teaspoon
5. Salt 1/4 teaspoon
6. Powdered Milk 1 Tablespoon
7. Eggs 3 medium sized
8. Sunflower Oil 1/4 cup
9. Honey 1/4 cup
10. Water 1/2 cup
11. Cinnamon to taste
12. Nutmeg to taste
13. Ginger powder to taste
Direction
1. Pre-heat your oven
2. Sieve the flours and mix in other dry ingredients: Baking powder, Baking soda, salt, powdered milk, cinnamon, nutmeg, ginger and set aside
3. Break the eggs, whisk and add other wet ingredients, oil, honey and water
4. Add the dry ingredients into the wet ingredients and mix just enough for all the ingredients to come together. Don't over mix.
5. Set your muffin papers into the muffin pan. You may need to grease your muffin liner if necessary, this depends on the quality of your muffin liner.
6. Bake in a pre heated oven until a tooth pick inserted comes out clean.
