Ingredients
Meat Pie Filling:
- Cow meat 250g
- Irish Potato 1 Medium Size (or sweet potato for a sweet tasting pie)
- Carrot 1 Medium Size
- Vegetable oil 5 table spoon
- Cold water about 125mls
- All purpose flour 1 teaspoon
- Onion half a Medium size
- Seasoning cube 1
- Thyme 1 teaspoon
- Salt to taste
Meat Pie Dough:
- All Purpose Flour 500g
- Margarine 250g
- Baking Powder 1 teaspoon
- Water about 100mls
- Pinch of Salt
- Egg, 1 medium size
Direction
A. Prepare the Filling:
- Cut the meat into tiny pieces and set aside
- Peel, dice and wash the Carrots, Potatoes and Onion, set aside
- Heat the vegetable oil using medium heat
- Add the onion and heat the onion for a while
- Add the meat and stir vigorously until cooked
- Pour water, add seasoning cube and thyme
- Cover to cook
- Add the carrots and potatoes and cook
- Dissolve the flour in cold water and add to the pot
- Add salt to taste
- Remove from the stove and let it cool, while you prepare the dough
B. The Dough:
- Add baking powder and salt to your seived flour
- Add the margarine and rub till it looks like fine bread crumbs
- Slowly add water and mix
- Sprinkle some flour on a neat hard surface, place the dough on it and knead more
- Put the dough back in the bowl and leave to rest for about 5-7 minutes, while you grease your baking tray, break and beat the egg and preheat the oven
- Knead and roll a small dough to about one quatre of an inch thick
- Cut into round shape and spoon in some of the filling
- Rub the inside edge with some of the egg
- Fold and press the edges together and seal the edges with a fork
- Rub the upper outer edge of the round dough with some quantity of the egg
- Bake for 20-30 minutes
